Sponge-Bob Eggs

Ingredients:

-1/4 up Butter

-12 Eggs

-1 Cup Milk

-1 Cup non-fat Greek Yogurt

-1 teaspoon Salt

-Optional: Chives, Bacon and Yellow Waxy Potatoes to serve with.

Instructions:

Preheat oven to 350 F

Place 9”X13” baking pan with the ¼ Cup of butter into the oven to melt while pre heating

Meanwhile place the 12 eggs, 1 cup of milk, 1 cup of non-fat greek yogurt and salt into a mixing bowl. You can use what you have to mix these together. I like to use an emersion blender but you could also place into a traditional blender as well. This is quick, maybe 1 minute.

Once this is blended and the butter melted in that baking pan, remove the pan and tilt so that the butter covers the bottom surfaces. Pour the egg mixture in. Bake for about 25 minutes until cooked through and the egg mixture firms up.

Let stand for about 5-10 minutes. We cut into squares and serve (hence the name Sponge Bob). Its great with chives on top and served along side some simple roasted potatoes and bacon.

While the eggs are baking I place bacon into our air fryer. once its done I transfer it to a plate and hold the heat by setting it in the microwave. Then I get going on the potatoes. I start with a waxy gold kind. I slice them into medium chunks, spray a little avocado cooking spray to coat them and place into the air fryer for about 12 minutes. Then I salt at the end.
