Say hello to this Blended Cottage Cheese Alfredo Sauce! It is every bit as rich, velvety, and comforting as the classic version, but it skips the heavy cream and butter. Instead, it gets its luscious texture from a secret ingredient: cottage cheese!
Before you worry about picky eaters noticing the texture—don't panic! Once this blends up, the curds completely vanish into a silky-smooth, glossy sauce that your kids will happily gobble up.
Why Your Family Will Love This Recipe!
Sneaky Protein: Cottage cheese is an absolute powerhouse. It gives this sauce a major protein boost to keep your little ones full and energized.
Blender Magic: You literally toss everything into a blender, whiz it up, and warm it gently. Dinner is on the table in under 15 minutes!
A True Crowd-Pleaser: It has all that comforting garlic-and-parm goodness that makes classic Alfredo so comforting.
Ingredients
1 Cup Cottage Cheese
½ Cup Freshly shredded Parmesan Cheese
½ Cup of Milk
2 Cloves of Garlic, minced
2 Teaspoon Cornstarch or arrowroot powder.
½ teaspoon Salt (more to taste but the ingredients also contribute salt)
¼ teaspoon Black Pepper
*Optional pinch of Nutmeg
Instructions
Place all ingredients into a blender and blend until smooth.
It will remain runny until warmed.
Place the mixture into a sauce pan and heat on low, gradually bringing the heat up and stirring until it begins to thicken. It won’t thicken until it is warmed and the cornstarch is activated.
Once thickened, remove from heat and serve.
Fun Ways to Serve It up!
The Broccoli Trick: Toss in steamed broccoli florets. The creamy sauce coats the veggies so beautifully that kids love eating them!
Add Some Color: Top it with sliced grilled chicken breast for a complete meal.
Fun Pasta Shapes: Switch out traditional fettuccine for fun shapes like wheels (rotelle), bowties (farfalle), or penne to make dinner extra playful for the kids.
Serve on Squash: My favorite way to pack in volume without loading up on caloric density is using squash. Spaghetti squash or zucchini are my favorite!
There you have it—a wholesome, velvety Alfredo sauce that brings all the comfort of your favorite Italian restaurant right to your family's dinner table, completely guilt-free. It’s quick, it’s packed with protein, and it’s so delicious that the kids will be asking for seconds.
